This weekend, I'm off to go on a BOATING trip. I'm so incredibly psyched. Thanks to Scott for teaching me everything I needed to know to not make myself look like a complete idiot (which I am - Georgia don't have much water).
Lyco: I'm so excited about this trip, but I know nothing about boats. What do I do?And you know what? It worked - I remember! And I've already impressed my ship captain with my breadth of knowledge.
Scott: All you need to know is that port is left and starboard is right.
Lyco: How am I ever going to remember that?
Scott: Easy. Port has 4 letters and so does left.
So off I go to have a blast this weekend - pictures to come. But I'll leave you with my new catfish recipe. I served it with rice and steamed broccoli.
Lyco's Impromptu Catfish
3 catfish fillets
1 cup cornmeal
handful of finely chopped parsley
2 cloves garlic, pressed
1 tsp each dried tarragon and chervil
1/2 med lemon zest, minced
salt and freshly ground pepper to taste
1 egg, beaten
Preheat oven to 450 and line a large pan (I used glass) with cooking spray. Put all the first ingredients onto a plate and mix well, beat the egg into a bowl. Rinse and pat dry catfish fillets. Dredge in egg and then dredge generously in cornmeal mixture. Lay side by side in pan and roast for 10 minutes in oven. Turn on broiler for 5 minutes to brown. Serve with lemon wedges.

2 other questions: how did the bathing suit work out? And did I read above that you used to be married? How did I forget that?
